Veggiefiber doet het; producten waarin deze vezels zijn verwerkt komen geleidelijk op de markt.<\/strong><\/p>\n<figure id=\"attachment_4697\" aria-describedby=\"caption-attachment-4697\" style=\"width: 140px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-4697\" alt=\"Tzatziki met Veggiefiber\" src=\"https:\/\/www.biobasedpress.eu\/wp-content\/uploads\/2013\/10\/Tzadziki-met-Veggiefiber1-150x150.jpg\" width=\"150\" height=\"150\" \/><figcaption id=\"caption-attachment-4697\" class=\"wp-caption-text\">Tzatziki met Veggiefiber<\/figcaption><\/figure>\n<p>Veggiefiber is een nieuwe loot uit de Provalor-groep. Dit MKB, winnaar van de Food Valley Award 2006, ontwikkelde technieken waarmee reststromen uit de Nederlandse tuinbouw kunnen worden omgezet in waardevolle stoffen. Tot menselijke voedingsproducten zelfs, producten die voldoen aan alle eisen van voedselveiligheid. Alles geholpen door een SBIR subsidie van AgentschapNl.<\/p>\n<p><strong>Naar de composthoop vanwege esthetische afwijkingen<\/strong><br \/>\n\u2018Gezonde voeding of composthoop\u2019, zo noemde het bedrijf het winnende project dat het in 2006 indiende. De Nederlandse glastuinbouw bijvoorbeeld heeft grote reststromen: jaarlijks 42.000 ton. In de AGF-sector (Aardappelen, Groenten en Fruit) verdwijnt bijna de helft van de productie naar de composthoop: 50% van aardappelen en andere knolgewassen, 45% van groente en fruit, 33% van granen. Veel producten worden alleen maar verwezen naar de composthoop vanwege esthetische afwijkingen. Provalor heeft productieprocessen ontwikkeld waarmee zulke reststromen kunnen worden opgewaardeerd. E\u00e9n van deze producten is Veggiefiber, dat bestaat onoplosbare groentevezels die in voedingsmiddelen worden gebruikt.<\/p>\n<figure id=\"attachment_4698\" aria-describedby=\"caption-attachment-4698\" style=\"width: 140px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-4698\" alt=\"Piet Nell\" src=\"https:\/\/www.biobasedpress.eu\/wp-content\/uploads\/2013\/10\/Piet-Nell1-150x150.jpg\" width=\"150\" height=\"150\" \/><figcaption id=\"caption-attachment-4698\" class=\"wp-caption-text\">Piet Nell<\/figcaption><\/figure>\n<p>Piet Nell, projectmanager van Provalor, somt de voordelen op van zijn producten. Ze zijn nieuw en natuurlijk, ze worden halfnat verkocht waardoor ze gemakkelijk vocht opnemen, ze zijn vezelrijk en dus laag in calorie\u00ebn, ze geven een verzadigd gevoel en kunnen daarom een onderdeel vormen van de strijd tegen obesitas en darmklachten. Ze zijn smeerbaar en goed te verwerken en ze kunnen HPP (dus steriel) verpakt worden. Ze worden al verwerkt in producten als sauzen, kaas, vleeswaren en snacks. Veggiefibers zijn nu leverbaar op basis van wortel, rode biet en komkommer; varianten op basis van rode, oranje, gele en groene paprika, en van tomaat, komen binnenkort. De levensmiddelenindustrie heeft Veggiefiber ontdekt en gaat de komende tijd goederen met dit product in de schappen van de supermarkt leggen.<\/p>\n<figure id=\"attachment_4699\" aria-describedby=\"caption-attachment-4699\" style=\"width: 140px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-4699\" alt=\"Rookworst gemaakt met Veggiefiber.\" src=\"https:\/\/www.biobasedpress.eu\/wp-content\/uploads\/2013\/10\/Herman-en-vegaworst-11-150x150.jpg\" width=\"150\" height=\"150\" \/><figcaption id=\"caption-attachment-4699\" class=\"wp-caption-text\">Mascha Eckhardt van Meatless en voorzitter van de bioraffinagetender Herman van Wechem proeven een rookworst gemaakt met Veggiefiber.<\/figcaption><\/figure>\n<p><strong>Vleesbite<\/strong><br \/>\nVeggiefiber kan ook worden gebruikt in vleesvervangers, onder meer verkocht onder de naam ProViand. Het zorgt voor een goede structuur en sappige bite. ProViand is rijk aan eiwit en arm aan vet en zout. Het is gemaakt van regionale groentes, bevat geen soja en is vrij van gluten en E-nummers. ProViand BV claimt dat de productie van ProViand in vergelijking met vlees 95% minder water nodig heeft, en dat de CO2-footprint slechts 10% is van die van vlees.<\/p>\n<p>Piet Nell wordt niet moe te betogen hoezeer de SBIR-subsidie Provalor geholpen heeft bij dit ontwikkelingsproces. De subsidieregeling gaf hem veel flexibiliteit en ruimte om te ondernemen, zodat hij de markt centraal kon zetten. Ideaal voor het MKB.
