Ook zonder dieren kunnen wij eiwitten produceren \u2013 ook nog van de juiste kwaliteit. Deze methode wordt veel onderzocht. Vivici, een bedrijf mede-opgericht door Marcel Wubbolts, is er een van. Onlangs haalden ze 32,5 miljoen op om hun methode verder uit te werken. John van Schagen besteedde er een artikel aan <\/strong>op de site van change.inc<\/strong><\/a>. \u2018Het idee dat we koeien nodig hebben voor onze eiwitconsumptie raakt uiteindelijk achterhaald.\u2019<\/strong><\/p>\n

Precisiefermentatie<\/strong><\/h2>\n

Vivici produceert eiwitten die niet te onderscheiden zijn van de eiwitten die koeien produceren. Met precisiefermentatie. Tot nu toe vooral gebruikt om dure producten als vitamines te maken. Maar de kosten dalen voortdurend. Daardoor raken nu de duurdere voedingsmiddelen als eiwitten binnen bereik. Alleen worden deze niet gemaakt in de koe, maar in reactorvaten waarin de juiste stoffen zijn verzameld.<\/p>\n

Vivici gebruikt precisiefermentatie om eiwitten te produceren die nagenoeg identiek zijn aan dierlijke eiwitten. Steeds meer startups gebruiken deze methode om duurzame voedselalternatieven te maken. In grote tanks worden bewerkte micro-organismen met voedingsstoffen samengebracht \u2013 zodanig dat ze het juiste eiwit maken. Vrijwel niet te onderscheiden van het echte dierlijke eiwit \u2013 maar wel veel milieuvriendelijker geproduceerd.<\/p>\n

Een game-changer<\/strong><\/h2>\n

Volgens sommige deskundigen, zoals Sina Salim van Protein Shift Consultancy, kan eiwitfermentatie op den duur onze hele voedselproductie op zijn kop zetten. Want eiwitproductie door de koe kost veel land, water en voer. Dat kan allemaal overgenomen worden door gemodificeerde micro-organismen in roestvrij stalen tanks. Geen methaanuitstoot meer en geen ontbossing. Terwijl het uiteindelijke product net zo goed van kwaliteit is als het product van de koe.<\/p>\n

Vivici komt voort uit DSM-Firmenich, waarvoor Wubbolts jarenlang werkte als CTO. Ook de Nieuw-Zeelandse zuivelgigant Fonterra geldt als aandeelhouder van het eerste uur. Nu komen daar nog drie nieuwe partijen bij: ABP, Invest-NL en InnovationQuarter. Voorlopig produceert het bedrijf vooral beta-lactoglobuline, een wei-eiwit. Het wordt verkocht aan producenten van sportvoeding en prote\u00efnedranken als Nestl\u00e9, Unilever en Danone.<\/p>\n

Op deze markt bewegen zich meer bedrijven. Zoals Cradle, ooit startup van het jaar \u2013 een bedrijf dat een AI-platform heeft ontwikkeld voor het ontwerp van nieuwe eiwitten. En Farmless, een startup die ook in de belangstelling staat bij investeerders. Ook hun technologie draait om precisiefermentatie. Zij zetten alcohol om in eiwit.<\/p>\n

Andere producten<\/strong><\/h2>\n

Vivici zoekt het in andere producten. Op dit moment richten ze zich vooral op lactoferrine, een aantrekkelijk voedingssupplement voor onder meer baby\u2019s en ouderen. Het komt in heel kleine hoeveelheden voor in melk. Maar Vivici zegt dit eiwit goedkoop en in grote hoeveelheden te kunnen maken. Als het goed gaat, wordt dit de omzetmotor waarop het bedrijf nieuwe producten kan gaan ontwikkelen.<\/p>\n

Ook FrieslandCampina heeft op dit gebied grote plannen. Het heeft een strategisch aandeel genomen in het Californische bedrijf Triplebar Bio Inc; een concurrent van Vivici. Maar opschaling is voor veel bedrijven in deze sector een uitdaging. Dan moet het bedrijf gaan investeren in geavanceerde bioreactoren en effici\u00ebnte processen; aanzienlijke investeringen nodig om concurrerend te blijven. Want intussen zijn de traditionele eiwitbronnen nog altijd beschikbaar.<\/p>\n

Het vervolg<\/strong><\/h2>\n

Vivici is niet van plan eigen fabrieken te gaan bouwen. Dat zou het proces van opschaling teveel vertragen. Het is in gesprek met Europese en Amerikaanse bedrijven die willen instappen. Een jaar geleden lanceerde Vivici het eerste product voor de Amerikaanse markt: beta-lactoglobuline, dat als ingredi\u00ebnt wordt geleverd aan partijen in de levensmiddelenindustrie. Nu investeerders binnenboord zijn, wil het bedrijf aanvragen gaan doen in de EU, het Verenigd Koninkrijk en Singapore. Het heeft een goede uitgangspositie. Het behoort nu tot de wereldtop; met patenten, een commercieel product en binnengehaald groeigeld.<\/p>\n

Maar zullen consumenten de nieuwe producten accepteren? Veel mensen kennen gefermenteerde eiwitten niet, als alternatief voor dierlijke of plantaardige eiwitten. Om het vertrouwen van consumenten te winnen moeten bedrijven moeite doen. Uitleggen wat de voordelen zijn van hun product, zoals duurzaamheid en voedingswaarde. Maar als dat lukt, lijken er geen obstakels te zijn op de weg naar commercieel succes.<\/p>\n
