De mens moet eten. Verreweg ons meeste voedsel komt uit de landbouw. Maar deze stoot ruwweg een kwart uit van alle broeikasgassen, wereldwijd. Kunnen we dat voorkomen? Kunnen we synthetisch voedsel maken met veel minder milieuproblemen? En zo ja, wat zouden de neveneffecten zijn?<\/strong><\/p>\n

Synthetisch voedsel?<\/strong><\/h2>\n

Onderzoekers onder leiding van de Universiteit van Californi\u00eb, Irvine, hebben dit bekeken. En publiceerden erover in Nature Sustainability<\/em><\/a>. Ze concentreerden zich op het voedselbestanddeel dat het beste industrieel kan worden gemaakt: vet. Kunnen we zonder landbouw vetten maken, chemisch en biologisch? Uit dezelfde bestanddelen die planten hiervoor gebruiken, water en kooldioxide?<\/p>\n

Het korte antwoord op deze vraag is ja. \u2018Het kan heel goed,\u2019 zegt de leider bij UCI van het project, Steven Davis<\/a>. \u2018We zouden er de uitstoot van grote hoeveelheden broeikasgassen mee kunnen voorkomen, terwijl we tegelijkertijd land vrijmaken dat anders zou worden gerooid voor boerderijen.\u2019 En er zouden meer milieuvoordelen zijn. Zoals \u2018minder gebruik van water, minder waterverontreiniging, plaatselijke zeggenschap over voedselproductie, minder kans op voedseltekorten door gebrek aan water, en minder behoefte aan slecht betaald en lichamelijk uitputtend werk.\u2019 We zouden ook bestaande landbouwgrond terug kunnen geven aan de natuur. Met meer biodiversiteit en misschien meer vastleggen van koolstof.<\/p>\n

Zullen mensen het aanvaarden?<\/strong><\/h2>\n

Er is een belangrijke vraag bij al zulke projecten: zullen mensen voedsel aanvaarden dat kunstmatige vetten bevat? Want \u2018kunstmatig voedsel\u2019 heeft niet direct een goede naam. Maar misschien zal dit helemaal geen probleem vormen. In de eerste plaats doordat veel vet sowieso onzichtbaar is in ons eten, want afkomstig van de industrie. Producten als koekjes, crackers en chips worden gemaakt met palmolie. Zullen mensen aanvaarden dat hier iets anders voor in de plaats komt? Misschien zouden de meesten het helemaal niet opmerken. Momenteel weten de meesten ook niet dat de olie komt van een plantage in Indonesi\u00eb.<\/p>\n

Maar het gebruik van zulke synthetische vetten zal veel effect hebben op de uitstoot van kooldioxide. Vetten afkomstig van landbouw, zo schatten onderzoekers, komen overeen met ruwweg 1 tot 3 gram CO2<\/sub>-uitstoot per duizend calorie\u00ebn. Met moleculair identieke vetten gemaakt uit aardgas zouden we dit kunnen terugbrengen tot minder dan een gram CO2<\/sub> per duizend calorie\u00ebn. En we zouden het zelfs nog veel beter kunnen doen, als we bijvoorbeeld onze reacties zouden verwarmen met zonne-energie.<\/p>\n

Vetten zijn uniek<\/strong><\/h2>\n

Tot zo ver de vetten. Ze zijn in ons voedsel uniek in die zin dat we ze kunnen synthetiseren met processen waar geen biologie aan te pas komt. We kunnen hogere temperaturen en drukken gebruiken \u2013 en daardoor een hoog rendement halen. Daar zullen niet veel mensen tegen zijn. \u2018Het kan veel mensen niet schelen waar de elektronen uit het stopcontact vandaan komen,\u2019 zegt Davis, \u2018maar veel mensen willen wel weten waar hun voedsel vandaan komt. Daardoor zullen we synthetische vetten vooral gaan vinden in industrieel bereid voedsel. Het maakt mensen minder uit waar dat vet vandaan komt, omdat ze het nu ook al niet weten.\u2019<\/p>\n

Maar bij het maken van koolhydraten en eiwitten, die andere belangrijke onderdelen van ons voedsel, gaat het heel anders. Laat staan bij al die belangrijke micro-componenten die we ook nodig hebben. Met andere woorden: we hebben nog steeds landbouw nodig voor ons voedsel. Vanuit het oogpunt van klimaat is het misschien goed om vetten kunstmatig te maken. Maar met chemie kunnen we niet alle milieueffecten van ons voedselsysteem oplossen.<\/p>\n
